Corn starch, produced by separation and purification process in the Corn Wet-milling Industry, is the source of carbohydrate which is composed of Amylose and Amylopectin molecules. Corn Starch has relatively higher amylose content than any other types of starches which results in higher ability in gel-forming. CharacteristicsStarch is well known for its gelatinization characteristics and its functional properties such as thickening, binding, texturing, stabilizing and viscosity enhancing.
