The chemical name of Trichlorosucrose (Sucralose) is 1, 4, 6-Trichlorosucrose (TGS), which is the sweetener with high sweetness prepared by the selective substitution of three hydroxyl in sucrose with chloride. Canada first approved its use in food in 1991, which is 600-650 times as sweet as sucrose.

Its outstanding characteristics are:
(1) Thermal stability, temperature and pH value almost have no effect on it, so in baking process, it is more stable than Alitame, suitable in the food processing of high temperature sterilization, spray drying, baking, extrusion and so on;
(2) Wide pH adaptability, applicable to food from acid to neutral one, with covering effect on such unpleasant flavors as acerbity and bitterness etc;
(3) It is soluble in water, not prone to bubbling, which is suitable for express filling production line of carbonated beverage.
(4) Pure sweet taste, its presenting speed of sweet flavor, feeling intensity of maximal sweetness, sweet duration and after taste are very similar to those of the sucrose, which makes it a very ideal powerful sweetener with comprehensive performance.
