Lemons The Lemon is a hybrid in cultivated wild plants. It is the common name for the reproductive tissue surrounding the seed of the angiosperm lemon tree. The lemon is used for culinary and non culinary uses throughout the world. The fruit is used primarily for its juice, though the pulp and rind (zest) are also used, primarily in cooking and baking. Lemon juice is about 5% citric acid, which gives lemons a tart taste, and a pH of 2 to 3. This makes lemon juice an inexpensive, readily available acid for use in educational science experiments. Varieties: Addalia, Verna, Persian Limes. -Addalia: The fruit is elliptic to oblong or rarely obviate, with moderately protruding nipple at apex, a low collar at the base; Peel yellow, longitudinally ridged, slightly rough because of sunken oil glands, medium-thick, tightly clinging; Pulp greenish-yellow. -Verna: Oval to broad-elliptic, with pronounced nipple, short neck; Peel somewhat rough, medium-thick, becoming thinner in summer, tightly clinging. Seeds generally few or absent. - Persian Lime: The fruit is about 6 cm in diameter, often with slightly nippled ends, and is usually sold quite green, although it yellows as it reaches full ripeness.
