The Science of Ozone
When most people think of ozone, they picture a thin layer of gas high above the earth's outermost atmosphere that protects us from the sun's ultraviolet rays. But this bluish gas, which sometimes is described as that "fresh smell" after a thunderstorm, has a variety of down-to earth uses.Ozone is a gas. And it's made of just one thing-oxygen.1. The principle of ozone sterilizationOzone (O3) is an allotrope of oxygen. It is a light blue gas with a special odor. Its molecular structure is triangular, with a bond angle of 116°, its density is 1.5 times that of oxygen, and its solubility in water is 10 times that of oxygen. Ozone is a strong oxidant, its redox potential in water is 2.07V, second only to fluorine (2.5V), its oxidation capacity is higher than that of chlorine (1.36V) and chlorine dioxide (1.5V), and it can destroy the decomposing bacteria. The cell wall quickly diffuses into the cell, oxidatively decomposes the glucose oxidase necessary for oxidizing glucose inside the bacteria, and can also directly interact with bacteria and viruses to destroy cells, RNA, and decompose DNA ( Polymers such as DNA, RNA, proteins, lipids, and polysaccharides destroy the metabolic and reproductive processes of bacteria. The killing of bacteria by ozone is caused by the disruption of the cell membrane. This process is called cell dissociation because the cytoplasm is comminuted in water and cells cannot be regenerated under dissipated conditions. It should be pointed out that, unlike hypochlorous acid disinfectants, the bactericidal ability of ozone is not affected by the change of pH value and ammonia, and its bactericidal capacity is 600-3000 times larger than that of chlorine. Its sterilization and disinfection effects occur almost instantaneously. When the ozone concentration is 0.3-2mg/L in water, bacteria can be killed within 0.5-1min. - Viruses Ozone has been shown to have a very strong killing effect on viruses. For example, at a concentration of 0.05-0.45 mg/L ozone, the Poloi virus loses its activity within 2 minutes.

- Spores Due to the protection of the spore coat, it is 10-15 times more resistant to ozone than the growing bacteria.

For more than a century, ozone has been used in Europe for purifying drinking water. Here in the United States, ozone is used for purifying bottled water and for decontaminating cooling towers. The City of Los Angeles currently uses ozone to purify its water supply. But ozone is not limited to drinking water.On June 23, 2001, the U.S. Food and Drug Administration officially granted GRAS (Generally Recognized As Safe) status to ozone for use in food-contact applications. With full FDA approval in place, food processors immediately began putting this exciting new technology to use in their plants.Today, ozone technology is used in the processing of meat, poultry, seafood and fresh produce because it is recognized as the safest, most cost-effective and chemical-free way of dealing with food safety management. Knowledgeable food processors have identified the No. 1 benefit of using ozone-it extends the shelf life of their product-so important in the competitive world of today's international food industry.Ozone History• 1840 - Discovered by Schönbein• 1893 - Used as a disinfectant in drinking water• 1909 - Used as a food preservative for cold storage of meats• 1939 - Was found to prevent the growth of yeast & mold during the storage of fruits• 1982 - FDA GRAS declaration for ozone use in bottled water• 1995 - FDA GRAS for ozone use in bottled water renewed without change• 1997 - Industry Expert Panel declares ozone GRAS and meets FDA requirements. Regulators have the option to later add control on ozone use.• 1999 - USDA rejects an ozone use protocol for meats, cites 1982 GRAS declaration for water where FDA stated "any other use must be regulated by a Food Additive Petition."• 2000 - Food Additive Petition, that addresses both water and air use of ozone, under preparation. FDA estimates approval will occur within six months of submission of the Petition.

How Does it works ?
• Odor and smoke are oxidized by ozone in a chemical reaction which results in the production of carbon dioxide and
water vapour. After treatment,ozone itself gets converted back into oxygen.
• Ozone breaks down the oil and grease in vapor form to carbon dioxide,water and a small amount of polymerized
grease which is bio degradable,harmless and leaves the exhaust duct in the form of a dry powder.
• Ozone reacts with all microorgansisms and eliminates them effectively due to its strong disinfection and oxidizing
power.
Though an electrostatic filter can remove a proportion of odours generated in the
cooking, some odours still can not be eliminated. So, the remaining odours need to be
treated by a strong oxidizer. Ozone, as a well-known powerful disinfectant, will
effectively mitigate the odours. Below are the benefits of the ozone generator for kitchen
exhaust system:
1.Reduction of Oil and Grease: this ozone unit reduces oil and grease in the kitchen
exhaust systems keeping the exhaust duct works clean and odour free. Ozonebreaks
down the oil and grease invapor form to carbon dioxide, water and a small amount of
polymerized grease which leaves the exhaust duct works in the form of a dry powder.
Polymerized grease is bio degradable and poses no health hazard.

4.Fire protection and duct cleaning: the ozone injected in the kitchen hoods oxidizes the
oil and grease in the vapor form preventing them from condensing on the cooler
ductworks down stream of the exhaust system preventing the build up of oil and grease
in the kitchens exhaust systems. This reduces considerably the risk of fire in the
ductworks and increases the life time of the ventilation system. The number of duct
cleaning or sweeping can significantly be reduced.
The ozone generator's outlet is connected to exhaust duct after exhaust hood. For
ozone reaction, it takes a minimum time to contact with odours and destroy them. And,
two seconds is the ideal timing. The ozone unit can be installed without an electrostatic
filter if the cooking only generates grease mist (no smoke), because ozone will ozonize
and break down greases and odours.
